Lactococcus lactis is a non-motile, Gram-positive coccus in the family Streptococcaceae, best known as the principal starter organism in the production of cheese, buttermilk, and other fermented dairy products. It is generally recognised as safe (GRAS) and is widely used as a model organism for lactic acid bacteria research and as a chassis for recombinant protein expression. The genome of L. lactis (~2.3-2.6 Mb) varies considerably between dairy and plant-associated strains, with the dairy lineages showing genome decay driven by adaptation to milk.
